This recipe is made with a silky homemade cheese sauce, two types of sharp cheddar, tender pasta shells, and a buttery Ritz cracker crust that broils to perfection.

Ingredients

Pasta & Sauce

  • 1 pound box medium shells

  • ½ cup all-purpose flour

  • 3 cups half-and-half

  • 1 ½ cups whole milk

  • ½ cup unsalted butter (for the sauce)

  • 4 cups shredded extra-sharp cheddar

  • 2 cups shredded Cabot Seriously Sharp cheddar

  • ½ rounded tablespoon salt

  • ½ rounded teaspoon black pepper

  • ¼ rounded teaspoon smoked paprika

Crust

  • 1 sleeve Ritz crackers, crushed

  • ¼ cup unsalted butter, melted


How to Make MaCorenia & Cheese

  1. Cook the pasta:
    Boil the medium shells until tender. Drain them, drizzle a touch of olive oil to prevent sticking, and place them in a cold water bath while preparing the sauce.

  2. Create the creamy cheese sauce:
    In a large pot, melt ½ cup unsalted butter over medium heat.
    Whisk in the flour and cook for 2 minutes.
    Gradually add the half-and-half and whole milk (room temperature works best) and whisk until slightly thickened.
    Add the salt, pepper, and smoked paprika.
    Turn off the heat and slowly mix in the shredded cheeses until smooth and velvety.

  3. Combine noodles and sauce:
    Drain the pasta from the cold bath and fold it into the cheese sauce so every shell is coated.

  4. Layer it up:
    In your baking dish, pour in half the cheesy pasta.
    Sprinkle a little extra cheese.
    Add the rest of the noodles and finish with another cheese layer.

  5. Make the crust:
    Mix the crushed Ritz crackers with the melted unsalted butter until well coated.
